In our quest to cook incredible tacos over at our Youtube channel called The Simple Taco, we began looking for a quality vertical rotisserie, sometimes called a vertical spit, trompo, shawarma or even “al pastor cooker”, we found lots over on Amazon. And they are of high quality, too. But all were lacking something that we really wanted: authentic charcoal flavor. Beyond that coal-kissed char that only charcoal can deliver, there is just something more authentic & charming about cooking meat in front of a burning suitcase of crackling, smoking charcoal.
There are countertop-type electric vertical rotisseries & outdoor propane powered spits available online, but the only real charcoal-fired shawarma cookers are either expensive commercial-sized units made for restaurants or food vendors, or a collection of DIY projects on YouTube that you can explore here, all of which are fantastic-ly shawarmtastic!
But, if you aren’t planning on starting a shawarma restaurant and you aren’t a metal worker, then what?
